Maxim maxing out

Today we ate...

Should get into a blog state of mind and take photos.

This is a great throw what you have in meal.  This week is tight and even though the cupboards are bare we always have eggs.

3 Carrots chopped
Tinned whole beetroot
A bunch of Spinach torn
Handful of various coloured chopped capsicum
Chives
5 Eggs
Splash of milk
20g of Tasty cheese
Sunflower seeds to top
Salt and Pepper
Spices ( I used Paprika and Cumin)

Roast carrots or whatever veges you have in whatever spices.  I used paprika with cumin with a splash of oil and seasoning. Let that cook in a oven at around 180degrees. Leave oven on

Once ready I put at the bottom of my cast iron skillet (tin is fine of course) Then added chopped capsicum, tore up washed spinach.

Combine egg with milk and grated cheese with chopped chives.  Pour over vegetables.  Crack open your beets and chop in half.  Place so round side up.  This makes it look predddy nice.  Cook until the edges have come away from the skillet the middle should still be wet.  Sprinkle seed on top and pepper and keep cooking.  I think I went for a hour best to check and see when it looks completely cooked and you are happy with how it looks.

Done and dusted.  Easy perfect afforable meal.

Dear Ian, Maxim, readers and me,

 This is me attempting to have a journal of sorts.  I am not a woman of wit and words nor a woman who cares much about these things but I love my son and I hope that one day he can sit down with me and I can live happily knowing that I have shared moments, stories full of laughter, tears and joy with him. At least I have noted moments when they have occurred.  I hope not to exaggerate or forget yesterday, today and tomorrow, if I'm not having to collect my thoughts 20 years later when you ask.

Maybe this idea of mine is me hallucinating as I am quite unwell.

Oh well here we go son.
